Apple Upside-Down Cake

This week's recipe for the bake-through was the Apple Upside-Down Cake. I made the full recipe but divided it to make two 6" cakes. I gave one cake to my brother and sister-in-law.



I am not a fan of apple cake but my husband is and he literally ate half the cake. I did taste it. How could I possibly make a cake and not taste it? It was really good. The crumb was tender and melt-in-your-mouth.


The cake was pretty easy and straight forward except for the apple-peeling part. I am NOT fond of peeling apples. I was a bit disappointed that I didn't get as much caramel as the picture in the book. The next time I make it maybe I should make a little extra caramel.

I also baked the Barcelona Brownies. Why? So that I would have dessert and also because I am a cerified chocoholic. These little gems were just perfect for me. I didn't do the ganache plugs though. I have baked this many, many times with the ganache plugs but in a 9" tart pan. This time I used my mini muffin pan instead.

  1. Oh Rozanne - I love that you turned the recipe into two 6" cakes! I imagine they baked a little faster, but did you make any other adjustments?

    I'm with you... didn't get as much caramel as I would have liked. I used Golden Delicious apples. How about you?

  2. Thank you Patricia. Yes, it baked a little faster but I don't remember exactly how many minutes. I didn't make any other changes.
    I used Golden delicious too. I would have loved to have more of the caramel.

  6. Your cakes look lovely Rozanne, what a good idea to make the mixture into two smaller cakes. That's what I must do or I am going to get So fat with all these wonderful cakes! Love your plates too!

  8. Beautiful cakes. What a great idea to make 2 smaller ones. Giving away half a cake is nice, but giving away a dessert in one piece is nicer :o)

I admit to arriving late to this site, & as I'm 5 days into a new apartment, a tiny one at that, & still reaching into boxes for things that haven't found a "home", truthfully, I haven't baked in the past 12 days... But I just wanted to bring up the question of using Granny Smith apples in this recipe. Their tart, sweet taste seems more concentrated, and I wondered what others thought of as this idea? I love baking with Granny Smith's! Luck to all!
