This week was "free choice" for the bake-through. I had every intention of making the Designer Chocolate Baby Grands but I had all these over-ripe bananas begging to be baked into a cake. So I made the Banana Refrigerator Cake. I used orange zest instead of the lemon zest. I am not a big fan of the banana /lemon combination. Instead of the white chocolate cream cheese buttercream, I used the Light Whipped Ganache.(recipe is from The Cake Bible)
This is my new favourite banana cake. It was really moist and tender.

ReplyDeleteI'm with Virginia (or its Toni?) with this, love banana bread, but not cake... I do like the combination of the chocolate ganache - never would I have thought of that.
ReplyDeleteYour cake turned out great! That is indeed a very good banana cake recipe. My friend made them into muffins and frosted them cream cheese frosting (not from RHC).

I love, love, love, love this cake. It is amazing. It is equally good without frosting, but it is sensational with the white cream cheese one.
ReplyDeleteI too leave out the lemon zest now, just because I can't be bothered to put it in and I couldn't taste it in the end cake.
