Banana Refrigerator Cake

This week was "free choice" for the bake-through. I had every intention of making the Designer Chocolate Baby Grands but I had all these over-ripe bananas begging to be baked into a cake. So I made the Banana Refrigerator Cake. I used orange zest instead of the lemon zest. I am not a big fan of the banana /lemon combination. Instead of the white chocolate cream cheese buttercream, I used the Light Whipped Ganache.(recipe is from The Cake Bible)

This is my new favourite banana cake. It was really moist and tender.

  1. Beautiful. I have never had banana cake but love banana bread.

  2. I'm with Virginia (or its Toni?) with this, love banana bread, but not cake... I do like the combination of the chocolate ganache - never would I have thought of that.

  3. Your cake turned out great! That is indeed a very good banana cake recipe. My friend made them into muffins and frosted them cream cheese frosting (not from RHC).

  4. Looks great! Love your pairing of banana, orange and chocolate. Light whipped ganache is a long-time favorite of mine, just seeing yours has me wondering when I can make it again!

  5. Thank you Toni, Monica, Hanaâ, Vicki and Julie. It really was a delicious cake. Give it a try the next time you have over-ripe bananas sitting around.
Julie, you can always make a batch and send it over to me :)

  6. I love, love, love, love this cake. It is amazing. It is equally good without frosting, but it is sensational with the white cream cheese one.

I too leave out the lemon zest now, just because I can't be bothered to put it in and I couldn't taste it in the end cake.

    Banana and chocolate - awesome!

I also made the banana cake. It was wonderful.

  8. Looks great. I like the banana chocolate combo.

  9. Yummo! I could really go for a slice!
